EA’s Chicken Nuggets

These chicken nuggets are gluten free and dairy free. Perhaps I was cooking chicken nuggets once a week for the kids after school. For me this was the best meal with them after not so great days: this light and happy meal in middle of the week worked, and still goes in hand in hand in my home cooked favorites. Recipe below!


Ingredients (go for organic when possible):

  • 1 pack of chicken tenders, diced

  • ½ cup almond flour

  • Sea salt and black pepper, to taste

  • 2 eggs, whisked (for coating)

  • ½ cup gluten-free breadcrumbs

  • Olive oil (for cooking)

Process:

  • Place the almond flour in a shallow bowl. )

  • Whisk the eggs in a second bowl.

  • In a third bowl, combine the gluten-free breadcrumbs.

  • Dip each piece of diced chicken into the almond flour.

  • Next, dip the chicken into the whisked egg.

  • Finally, coat the chicken in the seasoned gluten-free breadcrumbs.

  • Heat a pan over medium heat and add a drizzle of olive oil.

  • Cook the breaded chicken pieces in, flipping occasionally, until golden brown on all sides, about 5-6 minutes. (12minutes without oven)

  • Oven finish: Preheat your oven to 380°F (200°C). Transfer the golden-brown chicken nuggets to a baking sheet and finish cooking in the oven for 5-6 minutes.

  • Serve with your favorite sauce and enjoy!

**add spices: I do not add spices /powder as they activates the nervous system, meaning they influent the way brain is wired.

I use paprika, garlic powder in my cooking in very rare occasions like when my health needs medicine and my body is asking for more support.
