Grounding Green Sandwich
Here’s my favorite recipe for grounding green Pesto Avocado Romaine Bread) Sandwich that’s perfect for lunch:
For the Sandwich:
• 2 slices of fresh bread ( your choice) Upper East Side; try William Poll Multigrain toast
• handful of sprouts
• 1/3 ripe avocado
• 2-3 romaine lettuce leaves, washed and dried
• 2-3 slices of cucumber each side (optional)
Preparation of the Grounding Green Sandwich
1. Spread a layer of homemade pesto on both slice of bread.
2. Layer the romaine leaves (first and last) then handful of sprouts, avocado and cucumber on top of the pesto.
3. Add the cheese slice (if desired) or sparkles of ricotta for extra sass 💁🏼♀️ .
4. Close the sandwich, put it in your bag!
Few hours later…
5. Toast if possible leaving greens like romaine hamburger while toasting the bread (optional, for added crunch).
6. Close the sandwich, cut it in half, and enjoy!
This sandwich is freshly vibrant, and packed with green goodness flavor! Hah.
Perfect as a midday pick-me-up lightly.
